Cambodians are talented in producing delicious food that can be kept for long time such as chhaipov , sour cabbage ,cucumber pickle and other dry fruit as dry banana , dry mango , dry jackfruit. But because of they don’t have method for drying so it can make nutrient content loss as protein, fiber and the moisture are increase. Any way molds and yeasts was happened. To be good quality of drying jackfruit we need to pretreatment methods first as CaO dip and honey dip before dry in solar dryer.

According to any method of drying jackfruit and testing finished we got the result by CaO Dip are better quality than other methods. After drying the moisture in side low down 14.54% yeast 70 and other content are increase as Fiber 10.12% Protein 8.00% and yeast 70. Anyways it can keep protein and Fiber higher than other method even we keep for 90 days.
